You are in a hurry. You don’t have much time but still want to eat healthy. This easy, quick pasta or rice sauce recipe will be just what you need
This sauce is delicious and nutritious and is very quick and easy to prepare. You can prepare it while the pasta is cooking. Try this fresh, delicious and nutritious sauce on your favorite spaghetti, pasta or rice.
Ingredients: All fresh / Avocados optional, good with or without, if you have no avocados just add a little bit of virgin olive oil to the sauce
1 or 2 small ripe avocados (ripe when softto the touch) / can substitute with olive oil if no avocados are available
2 to 3 ripe tomatoes (or more)
1 shallot (small long onion)
1 clove garlic (or more as you prefer)
Parsley (lots,as much as you want)
Season to taste with salt (I prefer seasoning salt like Spike or Vege-Sal or other favourite)
***If you really want to spice it up, throw in a hot cherry pepper, cut into small pieces
Just chop up everything into a big bowl, season to taste, add your favorite pasta or rice, mix, and enjoy. Adjust ingredients to taste.
Try with whole wheat rigatoni.
